Wonderful Veggie Stir Fry with Zuchini or Yellow Squash

Hi Everyone,

I am new to this forum, but wanted to post my recipe..which I love.

Zuchini or Yellow Sguash Stir fry

1 medium Zuchini or Yellow Squash
1/4 yellow onion
3 mushrooms
1/2 tsp minced garlic
brocolli- couple florets
light soy sauce
terriaki sauce
red pepper

Cut Zuchini or Squash up in thin slices along with mushrooms, onions and brocolli
Put enough EVOO ( olive oil ) on the bottom of the pan to make a light coating. Probably 1/2 tbsp.
Cook vegies on med high and brown with garlic.
Add a touch of the soy sauce and terriaki sauce.
Add red pepper if desired.

Enjoy. I absolutely love this and it is very filling. Use whatever other vegies you would like that are from the negative calorie list. I am sure it would be delicious.

Yep I love stir-fry.  I use cabbage, baby carrots, brocolli, green peppers, green onions, yellow squash, zuchinni, bamboo shoots, baby corn (it isn't starchy and filled with carbs like full grown corn) and bean sprouts.  If it's meat day I add shrimp or chicken.  If it's fruit and veggie day, pineapple is also a good additive.

Then I spice it up with minced garlic, asian five spice and asian chili paste.  I also use the wishbone asian sensation 10 cal spray or a little soy or teriyaki.  It's got to have a little flavor to keep you from cheating!  You can also find very low-cal, low-fat or even no-fat asian dressings if you look hard enough.  I've found some as low as 15 cal per 2 T.

Glad you mentioned the carrots and broccoli I fogot I use those too.. Now I am going to have to start adding the bamboo shoots and baby corn LOL

I am not a huge squash fan so I would leave it out although I had some in soup last night and it was great...
