TaTa, one thing you can make is to take 1/2 of the baked potato you are allowed on day two and grate it, then put it in a pan with non-stick spray and make mock hash browns
I love it this way then have the other half of your potato at dinner

I've also found sugar-free ketchup at my grocery store and it would be heaven on those hash browns. What a great idea!
