New Veggie Recipes from old CSD Forum

These were posted in April of 2006 on this forum before it crashed I have tried the carrots but not the others --- when you try them let me know how they taste

Roasted Carrots with balsamic gaze

Preheat oven to 400
Pee and cut into 1" pieces a bunch of large carrots, Spray cookie sheet with cooking spray, (I put down parchment paper as well-clean up was a snap) pace carrots on cookie sheet, make sure they do not overlap..Spray tops of carrots lightly with cooking spray. Shake salt and pepper over tops of carrots. Drizze with balsamic vinegar.  Use 2 packets of Splenda to shake over carrots on the top of vinegar.  Roast for 60-70 minutes until brown and tender

Roasted Chinese Brocolli
Preheat oven to 400
Cut brocoi into medium-sized florets. Sice stems into 1/2"think rounds. Spray cookie sheet with cooking spray and set brocoli on top. Spray broccoli ightly with cooking spray.  Drizzle with soy sauce and shake black pepper (you can also put some garlic cloves on the cookie sheet if desired) Cook for 60-70 minutes or until brocolli pieces are browned and crispy

Roasted tomatoes
Preheat oven to 400
Cut whole tomatoes in half and squeeze to extrsact seeds.  Spray cookie sheet with cooking spray and place tomatoes skin-side up on cookie sheet. Spray with cooking spray again, lightly.  Use back pepper and garlic salt to coat tomatoes, then drizzle with small amt of balsamic vinegar.  Roast 60-70 min or until skins are softened and wrinkled and tomatoes begint o burn on the edges

Spicy Asian green beans
Cut stems of a bunch of fresh green beans and rinse throughly.  Heat a saucepan with cooking spray.  In a small bow, combine a clove of mashed garlic, a tea of red chili pepper flakes, a tbl of soy sauce and 3 packets of Splenda.  Begin sauteeing green beans until they start to become tender.  Add the soy sauce mixture and continue to cook on medium-ow heat until beans are wrinkled and tender

Hmmm, think I'll try the roasted chinese broccoli. Thanks for that! I love broccoli in tempura like you get at Japanese rest. so maybe I can fool myself!! smiley-smile
