This dessert was made for days in which you especially crave that little sweet something(day 2,5,6,7)
It was inspired by an Indian dessert called Gajar Halva...and tastes really good!
1. boil about half of a bag of baby carrots in water
2. Let the carrots soak until you can easily mash it up (this will take awhile- check after an hour or so)
3. Move the carrots into a separate bowl (Try not to include the water)
4. Mash the carrots up!
5. Add splenda and 0 calorie butter spray (I can't believe its not butter, smart balance, etc.) The amount depends on your taste
I usually use a lot of butter spray.
6. Mix everything together. Sprinkle cinnamon if you would like!
* If you are making it on day 4 (banana day), then you can use milk instead of water. I'm not really sure how much because I've never tried that before. It would probably taste closer to the actual Indian dessert!
I believe that this is allowed on all of the days because it's only carrots, which is in your soup anyway. Therefore, it's like eating the carrots in your soup in a different form
