1 cup sliced fresh mushrooms
2 green onions, sliced in long diagonal pieces
1 package fresh spinach, torn
2 cups sliced fresh strawberries
Tablespoon balsamic vinegar (I think just this small amount is allowed?)
1/4 cup fresh squeezed orange juice (should be allowed on day 3 as long as it's fresh squeezed--or no sugar added if it's store bought--if you ate an orange on this day, you'd be getting all that juice anyway)
Saute the mushrooms and onions in a non-stick pan with cooking spray, then add spinach for about a minute, then toss in strawberries. Cook just until strawberries get the chill off--not too warm. Mix vinegar and orange juice and pour over salad, and season with salt and pepper.
Enjoy!!

Do you agree that the vinegar and oj are ok on the CSD?
Also, if you're looking for variations when you're not doing a restricted diet, add poppy seeds, sesame seeds or walnuts and bacon bits. And if you can add a little oil (just a little) to the dressing, it helps...if you use extra virgin olive, you're having the good kind of fat! I've also seen adding strawberry preserves to the dressing--you could probably just puree some strawberries and add Splenda, then it would be guilt-free and allowed!!

Wow Jen, that sounds awesome! you definately sound like a "foodie" just like me! My husband and I have watched the cooking shows for years, and love them and love to try new stuff!
on day 3 for sure fresh squeezed orange juice should be fine...or squeeze a lemon and add splenda? I also think that the juice and splenda will bring out extra juices in the strawberries so the EVOO (extra virgin olive oil) wouldn't really be needed, if you want to stay true to the diet!
But thank you so much! I think that's what we need..new ideas and recipes etc. to keep this interesting! You are an asset for sure!

I am a Foodie all the way!! And I got my hubby into it, too. He subscribes to Food & Wine Mag and tries recipes out of that as often as possible. Even our young kids recognize Rachael Ray, Giada deLaurentiis, Bobby Flay, Mario Batali, etc... you name 'em, they know 'em. Cuz they're ALWAYS on my TV. My oldest (8 years old) sometimes asks if rather than be read a book to (at bedtime) if he and I can just watch a Food Network show instead. He PROMISES he won't ask for a book after the show.
He even wants me to try out for the Next Food Network Star...
So Cheers to the Foodies!!
P.S. Why would you want to eat raw veggies and fruit throughout this diet and not try to make the journey interesting?? It's much easier to stay on track if you're enjoying what you're eating, right?! It's just staying away from the pi$$in' alcohol...

I know! and another great network is "Fine Living" where Andrea Immer does all the wine pairings! Geeze Louise, it's hard to watch that without going to the wine rack and opening SOMETHING! Did you see the movie "Sideways"? We went there and did the whole wine tasting trip BEFORE the movie!! I have T-shirts and refridgerator Magnets from the very same places they went to! Now whenever we go to California, we try to go up to Santa Barbara and do a little wine tasting! and though we stay in hotels we bring our campstove and if there is a good deal on fresh seafood, or if we go deep sea fishing for the day or something we are prepared! Nothing cooler than opening a nice bottle of wine from a local vineyard, throwing some fresh shrimp or tuna on the grill and having a great picnic lunch!
AND...I am soooooo excited, the NEW next Food Network star starts Sunday! That is my all time favorite show! You should try out for it! But you are probably an excellent chef and they can be brutal! But don't forget to watch it June 3rd! God, we may have to start Personal Messenging each other so all these guys won't get sick of us talking about it!
Also, June 13th is the new "Top Chef"! Also a "must see" in our household!
