Not sure if I went overboard, but I probably ate around 2-3 cups throughout the day. This is how I made mine and I really liked it. I pureed the soup and mixed it in with my brown rice and added steamed broccoli. It was very good. Hope this helps. Good luck!! Barb

I ate about 2 cups too. Stir fried the rice in sunflower oil spray with onions and mushrooms and then added the soup with a dash of cayenne - very tasty! In the evening I roasted red onion, peppers, butternut squash and courgettes and then mixed them with hot cooked rice with a little soup mixed in - delicious! Rice day was one of the easiest for me!!
