Veggie Suggestions?

I'm not much of a vegetable fan in general - I love salad and spinach, and several not-so-good-for-you veggies like corn and avocados (I could LIVE on avocados).  I really don't like carrots or celery (except in soup).  I'm trying to find some new ways of eating vegetables as a snack or at mealtimes.  Does anyone have suggestions (or recipes) on ways to fake yourself out with veggies?

I am not a pro or anything but this is what i do....  I lightley spray some vegis (bell peppers, tomatoes etc) with pam and saute them with seasoned salt.  I think its pretty good stuff.  I was also thinking of something else today. 
Pico de Gallo is all vegi's so why not make it and dip your vegi's for the day in it?  I looked at a recipe and it didn't need any oil or anything so it should be ok.  I will try to find that recipe again shortly and will try and get back with you!  Hope i was some help.

Also try cutting carrots up length wise coat them with cooking spray, and place on cookie sheet back about 20 min until crisp, they are just like french fries only better

Just checking in:  Eating veggies as a main course is not so easy. I've been snacking on Cauliflower and Broccoli all morning, can't wait for day 3 to combine fruit and veggies. I'm having salad for lunch and not sure if I can put any dressing on it? Any suggestions

this is the recipe that i found

PICO DE GALLO
2 cups diced very ripe tomato
1 cup diced Spanish (purple) onion
6 - 10 jalapenos, finely chopped
3 cloves garlic, finely chopped
2 tbsp chopped fresh cilantro
2 tbsp salt



Dice 2 large, very-ripe tomatoes and 1 large Spanish onion into 1/4" cubes.
Chop jalapenos, garlic and cilantro.
Mix all ingredients and refrigerate at least six hours.
Keeps refrigerated for 4-5 days.
Variations - Add any or all of the following:

1 tbsp lime juice
1 habanero

like i said, it is practically all vegi's so i don't see why it would be a probblem, and i think it would be good over a tomatoe or eated as a salad dressing too.   
Another thing you could try in vinigar.  I had a salad today with just a little bit of it on there and i thought it was pretty darn good.  I added lots of every type of vegitable available to the salad and it bursted with flavor after i put the vinigar on it.  Hope this helps!

You can use apple cidar vinegar for a dressing if you like, as for your other veggies-- do a stir fry! you can use a little soy sauce or I have used a product by walden farms it is an oriental stir fry sauce, it has 0-zero everything no cal, no carb, no fat it is great

I just made  this today and it's nice. It's sort of a take-off from the Oven Roasted Veggies found in the South Beach Diet book.

1 zucchini, sliced
1 yellow squash, sliced
1/2 red onion, sliced
1/2 red bell pepper, sliced
1 10 oz package cut asparagus, thawed
2-3 garlic cloves, sliced
2-3 tbsp balsamic vinegar
Salt, pepper, oregano

Mix veggies with vinegar and spices. Bake at 450 for 30-35 minutes.

It's got a nice sweet-sour flavor that brings out the veggies.
