Low Calorie Salad and Soup

I just made a huge pot of my delicious cabbage soup. I know you are thinking it’s too hot for soup but it’s so low calorie and filling and that’s what I need right now!
Some of you have also written to me that you puree the soup and drink it cold or lukewarm. I say whatever way it takes to fit into your clothes comfortably is what works – whether the soup is hot or cold!

I just made a huge low calorie salad that I can eat on for a couple of days. I’m always mixing it up, depending on what is in my refrigerator and pantry! Today the salad has: artichoke pieces, hearts of palm, green onion, cucumber, tomatoes, blueberries, mango, and Kalamata olives (just a handful). I topped it off with some low calorie vinaigrette dressing. Now it’s chilling in the refrigerator and soaking in all of the flavors. The soup and salad will help me shed the pounds I gained when a dear friend came for a visit and we went way overboard on cupcakes and the best bread pudding ever. Now I know everyone says just eat slower, don’t deprive yourself etc. Sometimes that works but right now I need to shed some pounds FAST!!
