Roasted Corn Screams Summertime Fun
Want to take advantage of the summer Farmers Markets popping up everywhere? Then pick up some fresh ears of corn and make something special for your guests when it’s your turn to host a barbecue in your backyard.
It’s an easy recipe and it looks impressive. Here is what you will need:
6 ears of corn*1/2 cup mayo*1/2 cup Mexican crema or sour cream*1 medium lime for squeezing*1/2 teaspoon chili powder*1/2 teaspoon ground cumin*1 cup crumbled cotija cheese or Parmesan if you cannot find the cotija*paprika*extra lime for wedges.
Instructions: 1) Husk the corn but keep as much of the stalk as possible for easier grilling and eating. 2) Heat the outdoor grill to high. 3) Combine mayo, crema, lime juice, and seasonings in a good sized bowl and mix until smooth. Transfer this sauce into a tall narrow drinking glass. Put the cotija or Parmesan on a large plate. 4) Grill the corn uncovered until the kernels are bright yellow and a few have a charred look, about 2 to 3 minutes per side for a total of 12 to 15 minutes. Remove and let cool for a few minutes. 5) Hold the drinking glass of sauce slightly tilted and dip a cooled ear into the sauce, shaking off excess. 6) Roll in the crumbled cheese until completely covered. 7) Once all our dipped sprinkle lightly with some paprika for more color and put some lime wedges around the plate.8) Result an impressive dish and fun and messy to eat! 9) Calorie count is about 165 per ear but if you use reduced calorie/fat products it will be lower.
